Karaage Chicken Rice Bowl

This wonderful traditional Japanese dish consists of marinated chicken thighs, rice and salad, topped with Japanese mayonnaise. The juicy & tender chicken thighs are marinated in soy sauce, ginger and garlic, then coated in a mixture of cornflour and plain flour.


After trying this dish, you will be wanting it everyday! The crispy yet tender chicken, with rice and salad combine perfectly. You won't have to go to a Japanese restaurant to enjoy a delicious Karaage Chicken Rice Bowl, because this recipe will teach you how to easily make it from the comfort of your own home.

Karaage Chicken Rice Bowl

Serves 2

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins


RICE INGREDIENTS:

200g rice

400ml boiling water

60g diced onions

1/2 tsp salt

1 tsp olive oil


KARAAGE CHICKEN INGREDIENTS:

4 chicken thighs

4 cloves of chopped garlic

200ml soy sauce

200g cornflour

30g plain flour

Oil for frying


SALAD INGREDIENTS:

1 carrot grated

50g beans sprouts

1/4 sliced cucumber

80g sliced lettuce

10ml lemon juice


INSTRUCTIONS:

1. Start by preparing your rice: using a small saucepan with olive oil, brown the onions.

2. Add rice, water and salt and stir. Place lid covering only half of the pot and let simmer until the water has evaporated.

TIP: To achieve a perfect rice bowl for your presentation, make sure the rice is a little bit wet to ensure the rice holds its shape.

3. Marinade chicken with garlic and soy sauce.

4. Heat up a frying pan with oil (roughly 3 finger spaces to cover the chicken in the pan).

5. While waiting for the oil to heat up, prepare salad: grate carrots, slice cucumber and lettuce.

6. Mix all of the ingredients together for the salad and set aside.

7. Using a bowl, combine flour and cornflour.

8. Remove chicken from marinade and coat in flour mixture.

9. Fry chicken for roughly 5 minutes.

10. Plate up nicely, serve with Japanese mayo and/or wasabi, sprinkle with sesame seeds and enjoy!
