Healthy Big Breakfast Bruschetta with Poached Eggs & Bacon

Healthy Big Breakfast Bruschetta with Poached Eggs & Bacon

Serves 2

Prep Time: 15 mins

Cook Time: 10 mins

Total Time: 25 mins


MAIN INGREDIENTS

2 slices of pane di casa bread or the bread of your choice

4 rashers of bacon of your choice

2 eggs

1/2 smashed avocado

30g butter

2tbsp (30mL) extra virgin olive oil

1tsp (5mL) white vinegar


INGREDIENTS: Bruschetta Mix

30 cherry tomatoes cut in halves

30g of cherry bocconcini cut in halves

1tbsp (15mL) extra virgin olive oil

1tsp (4g) salt

1tsp (4g) oregano


OPTIONAL TOPPINGS:

6 jalapeños

2 handfuls (80g) fresh baby spinach

Balsamic glaze


INSTRUTIONS:

1. In a saucepan boil water and add a teaspoon of white vinegar to the water.

2. While waiting for the water to boil, in a large pan over medium heat toast the bread.

3. Crack the 2 eggs into separate shallow glasses. Remember to not break the yolk!

4. Once the water has started to boil, make a whirlpool in your saucepan with your strainer ladle and slowly place eggs into the saucepan (The whirlpool prevents the yolk from going hard). Poach eggs for 3 mins to achieve a runny poached egg.

5. Smash avocado into a small bowl.

6. Cut cherry tomatoes and bocconcini in halves and add to another small bowl. Mix remaining Bruschetta mix ingredients into the bowl.

7. Using a pan over high heat, fry bacon.

8. Once the bread has toasted, place onto a plate and spread smashed avocado over the toast.

9. Once the bacon is crispy, remove from the pan and place 2 rashers on each piece of toast.

10. When the 3 mins is up remove poached eggs from the water with your strainer ladle and place onto a paper towel to remove the excess water.

11. Place poached eggs on top of the toast, and add bruschetta mixed over the top.

12. Add optional toppings if desired and enjoy!
