The Best Thick & Creamy Chocolate Mousse Recipe

Chocolate mousse to me is one of those sweets you always see at a buffet and indulge in, but never seem to be able to achieve the same consistency and flavour combination when you try to make it at home. After many trials, we have fixed this problem and learnt how to make the perfect chocolate mousse. This recipe will show you how to achieve a thick, creamy, smooth & rich chocolate mousse, while still experiencing that light & fluffy texture.

We have broken the recipe down into easy to follow steps.

Thick & Creamy Chocolate Mousse Recipe

Serves 6

Prep Time: 5 minutes

Cook Time: 30 minutes

Set time: Minimum 3 hours setting in the fridge. For best results leave mousse overnight in the fridge to set.

Delicious Scale: Off the scale

INGREDIENTS:

220g dark chocolate

200mL thickened cream

2 egg yolks

2 egg whites

50mL white wine

20g caster sugar

INSTRUCTIONS:

1. Retrieve 4 medium size mixing bowls, 2 of which must be heatproof.

2. Break chocolate into medium size pieces into one of the heat proof bowls and melt bowl of chocolate over a bain-marie.

TIP: To make a bain-marie, let water simmer in a pan and place a heat proof bowl over the top of the pan to melt your ingredients.

3. In the other heatproof bowl make a sabayon mixture by whisking egg yolks, sugar and wine until combined and sugar has dissolved. 4. Place sabayon mixture over another bain-marie and whisk continuously until mixture has thickened, expanded, lightened in colour and holds a ribbon (roughly 7 minutes).

5. In the 3rd bowl, whisk egg whites until stiff.

6. In the final & 4th bowl, whisk cream until soft peaks form, but avoid over whisking the cream. The peak of the cream should drop to the side and not hold its shape completely.

7. Add melted chocolate to the bowl of cream and mix until combined.

8. Add egg white to chocolate & cream mixture and fold gently.

9. Add the sabayon mixture as the final component and fold.

10. Pour mousse mixture into ramekins and let set in the fridge overnight or for a minimum of 3 hours.
