Fudgy Cocoa Brownies

These super fudgy one bowl cocoa brownies with a crackly top, are to die for. We love trialling different brownie recipes, and discovering how to make brownies simple and easy to make. The best thing about these brownies are that you don't have to melt your chocolate or butter over the stove to achieve the same fudgy texture. All you need is 5-10 mins to bring all of your ingredients together and another 20 mins to bake your brownies. Sounds easy right? That's because it is.

Fudgy Cocoa Brownies

Makes 16 brownies

Prep Time: 10 mins

Bake Time: 20 mins

Total Time: 30 mins

INGREDIENTS:

113g unsalted butter, melted & hot

1tbsp olive oil

230g of caster sugar

2 large eggs

2 tsp vanilla extract

1/2 cup plain flour

1/2 cup unsweetened cocoa powder

1/4 tsp salt


INSTRUCTIONS:

1. Preheat oven to 170°C.

2. Grease a 20cm baking pan with cooking oil spray and line with baking paper.

3. Melt butter in the microwave for 40 seconds-1 minute.

4. In a medium-sized bowl, combine melted butter, sugar and oil. Whisk for roughly 1-2 minutes.

5. Add eggs, and vanilla and beat for another 1 minute or until the colour of the mixture has lightened.

6. Sift cocoa powder, flour & salt into the mixture. Gently fold the dry ingredients into the wet ingredients until they have combined. TIP: Do not combine ingredients thoroughly or over beat the dry mixture, as this will change the texture of your brownies).

7. Bake for 20 mins. To test the fudginess of your brownies pock them with a toothpick, the toothpick should come out dirty for extra fudgy brownies.

7. Remove from the oven and allow your brownies to cool.

8. Once cooled slice brownies into 16 pieces and enjoy.


Optional: Serve hot with ice-cream and crushed peanuts.
