Mini Molten Chocolate Cakes

Anybody who loves chocolate needs to try this recipe. These mini molten chocolate cakes are the perfect cheeky dessert, oozing with rich chocolaty goodness and baked to perfection. You won't be sorry if you have one of these as a cheat meal on the weekend.

Mini Molten Chocolate Cakes

Makes 6

Prep Time: 20 mins

Cook Time: 10 mins

Bake Time: 20 mins

Total Time: 50 mins

INGREDIENTS:

40g plain flour

45g icing sugar

80g almond meal

2 egg whites

80g melted butter

200g dark chocolate chips


INSTRUCTIONS:

1. Melt 160g of dark chocolate and butter over a bain-marie.

TIP: To make a bain-marie, let water simmer in a pan and place a heat proof bowl over the top of the pan to melt your ingredients.

2. In a separate bowl, whisk the egg whites until whipped.

3. Once your chocolate & butter have melted in the bain-marie, fold into whipped eggs with a spatula or whisk.

4. Add flour, icing sugar & almond meal and fold until mixture has combined.

5. Grease 6 small ramekins and place mixture in until half way.

6. Add remaining 40g of chocolate chips on top of each ramekin, to achieve the oozing consistency when you go to break into them once they have baked.

7. Bake ramekins at 155°C for 20 mins.
