Mini Apple Pies | Perfect Dessert to Make with the Kids in Isolation Life

This is a fun & easy recipe to make with the kids while at home in iso life. It is the perfect mini dessert for the cooler autumn nights we are starting have in Australia. In this recipe we will show you how to make the pie pastry from scratch, along with a delicious & simple home-made apple filling.


I don't know what it is about mini desserts that makes them so appealing, maybe it is the fact you can eat more than one and not feel so guilty.

Mini Apple Pies

Makes 6 mini pies

Prep Time: 10mins

Rest Time: 10 mins

Cook Time: 15 mins

Total Time: 35 mins

PASTRY INGREDIENTS:

100g plain flour

50g self-raising flour

50g cornflour

60g butter

35g caster sugar

1 egg

A pinch of salt


FILLING INGREDIENTS:

300g diced apples

30g brown sugar

50g sultanas

A pinch of cinnamon


OPTIONAL SERVING INGREDIENTS:

Ice cream or cream

Frozen berries


INSTRUCTIONS:

1. Preheat oven to 180°C.

2. Using a bowl make the pastry by mixing the 3 flours, butter, sugar, egg & salt.

3. Knead the pastry with your hands, until the texture turns into a dough.

HOT TIP: If the dough is too dry & is breaking apart add some more butter to the mixture. Don't worry too much about the pastry not being totally smooth, as it will bake fine regardless and be more crunchy if the texture of the dough is more dry.

4. In a separate bowl, mix all of the filling ingredients together and place the bowl in the fridge to set.

5. Grease a muffin tray with oil or butter and place a thick layer of pastry inside each hole. Remember to leave some pastry for the lids of the apple pies, which you use later on.

6. Using small pieces of baking paper cover the inside of pastry holes and add rice to the top of the paper, so it doesn't blow off in the oven.

7. Bake the pastry for at 180°C for 10 minutes.

8. While waiting you can start doing the dishes with the kids and also remove the apple mixture from the fridge.

8. Remove from the oven and remove the baking paper from the top.

9. Evenly add the apple mixture into the 6 pastry holes and use the left over pastry for the lids of the pies and close the pies.

10. Bake for another 10 minutes in the oven.

11. Remove from the oven when the time is up or when the pastry is properly cooked on top.

12. Serve with ice-cream or cream and top with some frozen berries.
