Fresh Prawn, Mango & Avocado Salad

This recipe is super simple to make and is great a meal to enjoy for a light & healthy lunch or dinner. The combination of flavours are full of freshness and zest.

 

Fresh Prawn, Mango & Avocado Salad

Serves 4

Prep Time: 10 mins

Cook Time: 10 mins

Total Time: 20mins


INGREDIENTS

400g peeled cooked prawns

1 clove chopped garlic

1tsp chilli flakes

1/2tsp salt

1/2tsp pepper

1/2 of the juice of a lemon

5tbsp extra virgin olive oil

1 cos lettuce

1 large mango

1tsp oregano

100g beans sprouts

1tbsp honey


INSTRUCTIONS

1. In a bowl, marinade prawns in garlic, chill, salt, pepper and lemon juice.

2. Slice lettuce, dice mango and avocado into medium-large cubes, and place in a salad bowl.

3. Add beans sprouts, oregano and 2 tbsp oil into the bowl and mix.

4. In a pan over high heat with remaining 3 tbsp of oil, brown the prawns.

5. Once cooked, place into the salad bowl, mix together and drizzle 1 tbsp of honey over the top.

6. Enjoy!
