This delicious ratatouille dish served with fried pumpkin & topped with Greek Dodoni Feta is the perfect vegetarian dinner. The ratatouille is filled with delicious and healthy veggies and cooked in a rich home-made tomato sauce. If you are a vegan this dish is also perfect for you, if you don't add the feta to the pumpkin.

Classic Ratatouille with Fried Pumpkin & Topped with Feta
Serves 7
Prep Time: 15 mins
Cook Time: 35 mins
Total Time: 50 mins
RATATOUILLE INGREDIENTS:
2 medium onions (1 brown & 1 red) in thick slices
2 medium eggplants diced 2x2cm
2 large red capsicums diced 2x2cm
6 large fresh whole tomatoes (make a criss cross on top)
4 cloves of garlic diced
2 medium zucchinis large chunks
RATATOUILLE SEASONING INGREDIENTS
2tbsp tomato paste
Pinch of fresh or dry oregano
Pink of salt & pepper
2tsp vegeta vegetable gourmet stock
Pinch of dry chilli flakes
Olive oil for cooking
PUMPKIN INGREDIENTS
1/2 pumpkin thinly sliced
Oil for frying
INSTRUCTIONS:
1. In a medium sized pot, brown onions & garlic in olive oil over high heat.
2. Add capsicums to pot and fry for a couple of minutes, stirring occasionally.
3. Repeat step number 2 in the following order; zucchinis & eggplants.
4. Add all of the seasoning ingredients to the pot, except for the tomato paste and stir.
5. Add whole tomatoes to pot & turn stove to a low heat, let the pot simmer until the liquid comes out of the tomatoes and the veggies become soft.
6. While waiting, add oil to a frying pan (enough to cover the bottom of the pan, roughly 2 finger spaces) and let the oil heat up.
7. Once the oil is hot, fry pumpkin in batches for 2 minutes on each side.
8. While waiting for pumpkin to fry add tomato paste to ratatouille pot, to thicken the sauce and let simmer over low heat until sauce has thickened.
9. Return to frying pumpkin, while waiting for sauce to thicken.
10. Once you have finished frying the pumpkin, place on a paper towel on a plate and top with feta.
11. Once ratatouille sauce has thickened and veggies are soft, remove from heat and serve together with the fried pumpkin.
12. Enjoy!
