Choc-Peppermint Slice

Chocolate and peppermint to us have always been a match made in heaven. The flavour of the two combine so perfectly, and this particular slice has always been a favourite in our family. It's super simple to make and a fun sweet to cook with the kids.

Choc-Peppermint Slice

Makes 18 slices

Prep Time: 30 mins

Cook Time: 15 mins

Set Time: At least 5 hours (or overnight for best results)

Total Time: 45 mins + setting time

Delicious Scale: Off the scale 🤤


INGREDIENTS:

Base:

125g butter, room temperature & chopped

1/3 cup of caster sugar

1tsp vanilla essence

1 cup self-raising flour

1tbsp cocoa powder


Filling:

2 cup icing sugar

2tbsp milk

120g softened butter

1tsp peppermint essence


Topping:

200g cooking chocolate

1 tbsp vegetable oil


INSTRUCTIONS:

1. Preheat the oven to 180°C.

2. Grease a 26cm x16cm (Base measurement) slice tin, with oil or butter and line with baking paper.

3. Break chocolate and place into a heatproof bowl.

4. Sit the bowl over a pan of barely simmering water (a bain-marie) and allow the chocolate to melt, stirring occasionally.

5. Use an electric beater to cream the butter and caster sugar until pale and fluffy.

6. Add vanilla essence, flour and cocoa powder and beat until smooth.

7. Using the back of a soup spoon, spread the mixture into the prepared tin with baking paper.

8. Bake it for 15 minutes, then set aside to cool down.

9. Prepare the filling by adding all the ingredients into another bowl and beat until smooth.

10. Place into the fridge to set.

11. Chocolate should be melted by now, add oil, stir and leave the bowl on the top of the water but turn the stove off.

12. When the base has cooled down, spread filling on the top then spread the chocolate.

13. Set in the fridge, once it has set cut into squares and serve.
