Traditional Greek Pork Souvlakia, Chips, Greek Salad & Tzatziki

Whoever has had the opportunity to travel to Greece, can understand how amazing the food is and how hospitable the Greek people are. Cooking has always played an important role in Greek society and the Mediterranean diet offers a range of health benefits. Greece's climate and richness in soil, allows for easy growth of olive & lemon trees, and fresh & organic fruit and vegetables. Food is known to bring families together in the Greek culture and this is another reason why it is so important.
The traditional Greek dish we will be showing you how to make below is pork souvlaki (meat pieces on a skewer), with home-made freshly cut fried potatoes (chips), traditional greek salad and tzatziki (cucumber, garlic and yogurt sauce). The combination of these ingredients work so well together and truly remind us of Greece.

Traditional Greek Pork Souvlakia, Chips, Greek Salad & Tzatziki
Serves 10

Cook Time: 1 hour
Total Time: 1.5 hours
PORK SOUVALKIA INGREDIENTS
2kg pork leg roast (bone on)
6 cloves of garlic peeled
4 brown onions
3 red capsicums
Oregano
Salt & Pepper
2 lemons
HOME-MADE POTATO CHIPS INGREDIENTS
10 dirty potatoes peeled and chopped
TZATIKI INGREDIENTS
1 peeled cucumber grated
1kg of Greek-style natural yogurt
2/3 head/bulb of crushed garlic
Salt to taste
Dash olive Oil
GREEK SALAD INGREDIENTS
3 large tomatoes
1/2 cucumber
300g Dodoni Greek Feta
1 red onion
Dash olive oil
Salt to taste
TZATZIKI INSTRUCTIONS
Make your tzatziki first to allow it to sit in the fridge.
1. Peel the cucumber leaving some of the green skin on, this will add colour to the otherwise plain-looking sauce.
2. Place a tea towel in a medium-sized bowl, and grate cucumbers into the tea towel.
3. Once grated, squeeze as much juice as possible out of the cucumber into the bowl, by twisting the tea towel into a ball shape (You can drink the cucumber juice as it’s very nutritious).
4. Using a Mortar and Pestle, crush the garlic with a pinch of salt.
5. In a large round container, add yogurt, crushed garlic, olive oil, grated cucumber and salt. Mix well.
6. Taste the sauce, if you notice a strong yogurt flavour, add more salt. Continue tasting and adding salt until you achieve your desired flavour.
7. Place into the fridge, until ready to serve with the rest of the dish.
GREEK SALAD INSTRUCTIONS
8. Chop tomatoes into medium sized chunks, slice cucumbers & onions and break feta with your fingers into desired size pieces.
9. Dress salad with salt and olive oil and place in the fridge with tzatziki.
HOMEMADE POTATO CHIPS INSTRUCTIONS
10. Now move onto chopping up your potatoes into medium-thick cut chips.
We will fry them later.
PORK SOVLAKIA INSTRUCTIONS
11. Chop capsicums and onions into chunks as per photo above & reserve. Chop garlic cloves into halves and reserve.
12. Chop pork roast into large chunks as per photo above.
13. Place meat into a casserole dish and season the meat with oregano, salt, pepper & garlic cloves.
14. Assemble souvlakia sticks, in the following order; meat, onion piece, capsicum piece and repeat until the stick is full.
15. Cook on the BBQ for 30 mins, or until meat has been cooked.
HOMEMADE POTATO CHIPS INSTRUCTIONS CONTINUED
16. While waiting for the souvlakia to cook on the BBQ, heat up a frying pan with oil and fry your chips in batches until golden brown and crunchy.
Don't forget to turn the souvlakia over on the BBQ, while you are waiting for your chips to fry.
PLATING UP
Once everything is cooked, plate up your dish. For extra flavour squeeze lemon over souvlakia, and salt the chips.
